The Schild Estate 2004 Barossa Cabernet Sauvignon continues our commitment to the variety as a premium style from the Barossa Valley.
The 2004 vintage proved to be a season that was destined to give the most that you allowed the vineyard to provide, and in our case we were able to extract amazing complexity and fullness to produce a stunning wine. By sourcing the fruit for this wine from the low yielding Angus Brae Vineyard we were able to produce this great Barossa Cabernet Sauvignon.
The grapes were harvested on the morning of 31st of March 2004 at a ripe 15.0 degrees baume. It was then taken to the crusher and de-stemmed before allowing to ferment for 8 days in contact with the skins to extract as much colour and flavour as possible.
Following fermentation the wine was matured in a mix of new and old French oak adding complexity with spices and tannins extracted from 16 months in those barrels. Racked, clarified and stabilised the wine was then sent to bottle in September 2005.

Dark red magenta to bright purple.
Nose
Herbaceous nose of capsicums and tomato bushes with eucalyptus and cigar box notes.
Palate
Ripe juicy palate with forward strong tannins and flavours of plums with concentrated cassis notes.
